“Let’s keep the first date casual and stick to drinks. There will be plenty of room for fancy dinner dates in the future :)” “That sounds amazing but for our first date I have a different plan” then offer to cook at my place and share wine on my balcony “Let’s keep the first date casual and stick to drinks. Food can make me sleepy”

On the 2nd point - no, I agree with you 2 days is fine for the takeaway. But I still think the soft close was offered too early - the entire interaction looks like it was about 16-20 hours, then the 2 day takeaway, then the 4 day response. I agree if there's a strong organic connection then a soft close can happen fast, but as you say this is just some pop culture banter and not that solid.

I think the goal is definitely to have strong flowing real time conversation by responding as quickly as possible (easier said than done of course- it's tempting to just sit on a response in order to think of a "perfect" response) Not only does it build a stronger connection/vibe but it reduces chances of shit happening like her talking to other guys while waiting for your reply or her getting busy and forgetting to reply for example.

I'll have to respectfully disagree with you there. Every guy is rushing to "beat the oncoming competition" and I think that's the wrong frame. Indifference is a magic ingredient, at the right times and places. Let her wonder why it's taking a reasonable amount of time (not too much obviously) for you to reply. My view is do NOT put her in the frame of "she's the prize and I gotta rush to take her off the market". No no no. You are equals in this game.
