Here's what I would do, just setup the date at a cool bar/lounge. (Dinner should never be mentioned) you can schedule it on the late side so it's likely she's already eaten.
After the drink you can invite her back to your place or even suggest going back to hers. Another option is getting an airbnb and inviting her there for the drink since you live at home, then go for the close. I've successfully done this when out of town. Best of luck!
