I put way less effort into my dates and usually buy cheap ass wine. If you're getting make outs and no sex from my experience the girl thinks you just want sex. This is fine for some girls, but turns off a lot as well. My conversations are very platonic for a while into the date before slow physical escalation. If the girl isn't super into the make out then I pull back and keep building comfort. If I can't build comfort then I ask her what's up and answer objections. By the time I'm going for the make out I've already held her hand, played with her hair, etc. Be genuinely interested in what she's saying and actively listen. There are surely more optimized ways, but this is what I enjoy.

As for pulling her to your place just make up some excuse "oh let's take a nap/watch a movie/cuddle/etc."

You should not be so ambiguous about drinking gin. You could take it down a notch by saying you'll do a shot or 2 or make a mixed drink. Nobody is getting drunk off splitting some wine, but a bottle of gin is a different story. Build more comfort and make it clear you're not trying to get her wasted. You might want to even take a step back and show the interest is in her and the Netflix and gin are optional. Hope this makes sense.

You can go out for coffee if you frame it that you will come back to your place like you did here. Making tea can be an alternative as well, but it's not as universal as wine.

My general rule is to never go hard with sarcasm with people I just met. Female or not, most of the time it doesn't go over well. You can try this out in person if you want to see for yourself. You can give very light obvious sarcasm, but a direct blow like this is too much. Once you meet her in person and you're comfortable, you can get away with a lot more and push the envelope.
