I have no issues getting a first date lay and normally have a good time with the girl but somewhere between the second and third date I normally get "I'm not looking to date right now" the reasons have been anything from a lack of trusting me, to not feeling good enough. I normally don't text the girls too much in between and carry on running game but wonder if showing more interest might be a better policy

It's impossible to say based on this information but I will say though that if a girl says "I'm not looking to date right now" she was either looking just for a ONS or she got the vibe you were looking for an actual relationship.
What types of dates do you normally do with these girls?

Why would me looking for a relationship be an issue? One of these girls I’m referring to asked me on the first date if I saw her romantically and I said no, she then said it can grow in time etc.
Date wise I always do a fuck date at mine for the first and if I get on with them I’ll take them for a drink on the second.

Because there are lots of girls on tinder who do not want a relationship.
The first date you're doing is good but not sure about that second date. I usually just invite girls back to my place again for the second date.
