Now what if I don't drink personally? I was never told I can't, just that it's "better if I dont" that's always something I struggle with, like inviting girls out for drinks if I don't drink

Just have a few sips of your drink. Literally, just sip on your glass of wine and you'll be good. If you are super paranoid about having any alcohol in your system (Which you should not be), then just take some activated charcoal before hand, it will soak up all the alcohol that you ingest. This is by far the best approach to take if you're serious about busting a nut. A lot of girls need a drink or two to "take the pressure off". By taking a hardcore no drinking route, you will close a lot of doors.
PS - I don't really like to drink either, so I understand where you're coming from. But like I said, there's a simple solution

As a funny side note because of my disability I would always get stopped by cops around campus when I was in college so after a while, just stopped going to bars. And I have a few uncles that had issues with that. But I see your point, just bc I've had a drink or two doesn't mean I'll become a sloppy asshole

Seems like you're overthinking a lot of this stuff still. Pour two glasses of wine, one of you, one for her. Just have a few sips (or even pretend to sip) yours. If you're leading the interaction well, odds are she won't even notice.
