If you were feeling it, I recommend setting plans a few days out on the actual date. (I think it increases odds of closing that night as well). As played, I might say "oh, did the 537653 marriage proposals not come through? My B, old phone ;)"

I like this because it subtly makes fun of her for expecting so much after one date, and conveys that you don't feel a need to defend yourself.
"Okay, I understand. If you do want to pursue it I'll pay for coffee š"
It sounds like she has some underlying issue here, I'd try to dig deeper. You could say "is it because I'm too ugly?" to get her to tell you what's on her mind (also assuming you are not actually ugly)
I would just move on at this stage. Why do you think it was a good first date?

Nothing physical happened as I didn't escalate. We just walked, grabbed coffee. We hung out for about 90 mins. I did have a 2nd date scheduled right after so I abruptly ended the date when I saw the time. I'm thinking that might have rubbed her the wrong way.

yeah thats possible but i think the bigger issue is the fact that nothing happened
