Update: I reopened 2 weeks later.
I think to text her back something like "Hey, I can’t wait to see you, If we go out on the date this is what it’s going to be like: we'll go to my favourite cocktail bar, and we will walk outside where we can see the illuminated river bridge, and hopefully we hold hands. then I will kiss you and lightly bite your neck if there is chemistry. And we will do it all in the starlight..."

Coming off way too needy. If she’s genuinely busy give this chick more than 48 hours to respond to you. As long as she consistently responds that’ll be a good sign.

The bottom line is your in person interaction was not good enough. But when she says "I know I'm the champion of texting back" this is a sarcastic response. You should be responding back sarcastically too/giving her some shit instead of trying to make her qualify and doing a hard close (rewarding her). When she says she can't make it, you need to just leave it and not push again.
