She’s not giving me much so I’m thinking of calling it out
“A woman of few words I see”
Or
“Ah so fancy restaurants and snap chatting your food daily?”
First one is no good. Too confrontational/harsh of a tease/validation strip. And you can't really blame her too much for her response here. You asked her a simple question. Sure if she was higher investment, she would've responded more than that but when asking questions you generally want to ask open-ended questions if you can and avoid yes or no/ dichotomy questions like your one.
Second one is okay, it's a bit of a tease which is what you need to do here. But it's a bit of a DLV in the sense that it could be interpreted that you don't go to fancy restaurants much. The idea of teasing her for being superficial is right though.
Her response here is not great. So you need to challenge/tease her in order to spike the convo and punish her sub-optimal response. I assume NC where she's from is north carolina which is more country and now she's in more of a city. So you can try teasing her about trying to fit in with the people here "Trying to fit in are we (smirk face)" or being superficial/basic"Yeah I think you'd fit right in with all the city girls (smirk)"
Soft close but know that you're going to have build a fair bit more investment/interest over text before hard closing otherwise it's almost a guaranteed flake.

Agree with everything else but how is a "ah woman of few words i see" too harsh/confrontational and validation stripping in any way?

That phrase is only for a complete lack of response or an inappropriately terse response to an open ended question.
It doesn't work when she's just returning your energy

I'd do a little twist here like Bob says bc you def need more investment
"Do you want me to see, are you genuinely interested in meeting up? I'm quite busy these days but could make a little time if you definitely are"
