What do you do if the issue is not "indefinite" like something comes up that day (given that she is interested and invested).
What is the optimal way to handle this?

avilench's line. You can ask her what she's thinking. But if she has no idea or won't give an alternative time, I wouldn't push hard that day for a reschedule. Live to see another day. Engage with her as you would the next day or so. Depending on how long the interaction has been on going and how much value you have, you may have to go through the motions of text gaming to get that meet again. Don't assume it's done work and the next day go for the meet. But that's something you'll have make a judgment on based on well you've done in the interaction.
