Matched with this girl on bumble but she doesn't open so i extend the match (hence the apology in the first text). Already double texted her, what can i say now that might get her to reply but also doesn't seem needy from my side?

Seems like it's been a couple of weeks so I would definitely say something like "Damn I didn't take you for the shy type" or "Damn did I scare you off?" - I would maintain low expectations though, and try to move things to text as soon as possible if she responds so you reduce the chance of flakiness.
