I brought up the idea of a date early on in the interaction but she wants to chat a bit before. I'm definitely overthinking this but I can't come up with anything that moves things forward while staying interesting. Thoughts?

That's not a bad response at all. I like Eric's suggestion. Just get to know each other a bit and then drop the "do you like X" seed. Also, when/if she asks "tell me about yourself" say "what would you like to know?", instead of randomly qualifying yourself (Alex's idea).
