I'm thinking something simple like "Good" and then open her a new day.
I'm open to suggestions

Move things along and try to a soft close. I would go with something, "Glad to hear, what are you doing on this ________(whatever day of the week)" You want to get some rythym going, vibe, and shoot the shit
If she doesn't respond you should use another takeaway or so "Don't think too hard..." etc.
