"College frat boys? What kinda men are you hanging out with? lol"
Update
Thinking of saying “Hope you got the ass to back up all the sass”
“The more you play hard to get, the harder I get”
Unless that’s your job I wouldn’t put it in there. I would send her the Wikipedia link and just leave it there to call her out

Just some suggestions

I’d say turn it on her. “So you’re saying you don’t find sex interesting? 🤔” or something of that nature. It flips the frame and puts her in a defensive spot while also letting you maintain your stance as a sexologist.

I appreciate the help. I see where you’re coming from but I think she’s basically calling me immature for having that as my job. She’s not saying she’s not interested in sex but calling me out. So I’m not sure if telling her that will change her opinion

I should have explained better. I know she’s calling out your sexologist job and not saying she’s not interested in sex. What I was suggesting is going the “playful misinterpretation” route. Of course she’s interested in sex. But her reaction to you being a sexologist suggests otherwise, which is something you could playfully misinterpret.
