Seemed to be going really well she was replying every 5 mins to compared to me every hour.
After the second last message she took slightly longer and seems to be being slightly sarcastic and then she took 3 hours to respond to the last message. What’s the best way to flip it back ?

There are definitely certain things I'd have done differently. But, let's focus on closing. When you said "I'm sure we can top that" that was a prelude to a soft close. You got away for the chick to agree ( which she was going to do) before you go to the hard close and logistics. This may seem like not that big of a deal but it actually makes a huge difference.
You can say "Just a feeling, am I wrong?"
