I'm travelling and want to arrange dates for 2 or 3 weeks in the future ahead of reaching New destinations. Its not working out. Cant follow the advice to building up to asking them out because when I try book a date for weeks in advance the trail goes dead. I want to build rapport and comfort but without it getting boring. Any advice?

Not optimal, why confirm a date a month in advance ? You'll only make the flake rate sky rocket.
Everybody has a life, everybody has unexpected events happening all the time. If you want to do that, I'd say have a phone date set up once a week so you can talk to the girl and build comfort before arriving.
However, since you'll only be to that new destination for max 2 to 3 weeks, I doubt girls will invest in you romantically... MOST of them don't like the idea of being "pumped and dumped".
If you're going to do that, you should make it clear that you are going for work and haven't planned to go back home yet.
