Part of me thinks this a legit excuse and she did mention
to reschedule. Not sure though. For more context, last week when I tried to make plans she had said she was too busy, but that next week would work. Thanks for any response help here.

Seems legit
"All good. Yeah. We can aim for saturday if you're better. But rather make solid plans tbh. hmu when you're all better". I would just give her space to remove the possibility that it might not be legit. If she didn't reach out, then you know you were never gonna meet her to begin with
