Examples of where I've gone for the close quick, maybe too quickly, and the girl has ghosted. Do i need to slow down, get more investment? Or chalk it down to flaky girls. I think these are gone but open to any resurrection tips!

The first one i would just reengage, doesn't seem that you closed her too soon.
Second one after the ''hahahah, yes'' you should have aked ''do u like wine ?'' or something similar.
If the first doesen't repond anymore, well shit happens. The second you kinda messed up with close and then asking her about wine.
And the ''Top secret,might be able to reveal over wine'' line should have been one message and not two.
Might seem trivial, but women make anything trivial important.
