How would you guys check her even if you legitimately slipped up twice? Is checking her something I should even do?

I see its a red flag shes already getting mad at something like this, if its me and she missed what I said I’d easily just repeat it.

Run down on the situation :
Just started talking to this girl only 3 days ago and shes already getting a temper about me “ not listening” about certain things she said. So far its been 3 times this happened and the 3rd time she mentioned it which was just now was about how she spelt her name but she never told me how to spell it she told me how to say it and so I told her that in the voice message.

Not enough context here for me to make a judgement call. there's only one screenshot and includes a voice memo that we can't listen to. If you feel like this girl is being difficult though, then call her out in a non butthurt way. Make sure you do it in person though. And not over text or something

What if we can’t see each other in a while & it happens again should I just call it out on the phone?

It's most likely a form of a shit test although if it keeps happening you're totally right, it's a big red flag. Especially if she's seriously mad - if she's teasing or just mucking about it's very different which is why context/tonality etc. is very important. As for replying to the "don't tell me to calm down" honestly just ignore it.

As for replying to the "not listening" - I don't think it's necessary to check her this early, just given my experience, more often than not the chick is messing w you. I would mess with her back a little and reply with "Listen Lauren (obvs not her name), it's not that big a deal.." - MAKE SURE your tonality and the vibe of the voice memo is correct (in a serious joking manner if that makes sense)
