Girl from gym, where to go from here
I approached this girl at the gym who I’ve seen quite often, wanting to get to know her. It worked out well cuz we were waiting for the same machine and we ended up working in with each other. There was good banter and it made sense for me to suggest that we hangout sometime. So I did and got her number.
We started texting and then she just stopped answering; it’s been a couple days already. Do I bother to double text her (if so, what would I say), or do I just wait to start a new conversation when I see her at the gym?

How was the vibe in person? I ask because based on her first two replies, she is clearly someone who enjoys playful banter a lot. She tested you twice and you backed down both times. She swung the door open to be playful and when you didn't give it back to her, she apparently moved on. My natural personality is this way so when girls come out the gate like that, I don't hold back.
When she said 'the guy that walks stiff?', you could've come back with 'I knew you were watching me walk away'
Even after that, when she said 'truth hurts' you could've said 'Kind of like the truth that you gave me your number, so shush' This would've shown her you will give it back to her plus the 'so shush' is a soft test for her to see if she likes being put in her place and given direction.
Ah got you man, makes perfect sense. To answer your question, the vibe in person was very good banter and a lot of laughing. So yea I wasn’t very consistent from person to text. What would you do now? Double text?

Yeah, I would give it a shot. Maybe be more playful and borderline troll her to see if that's really her thing. Maybe something like 'Still got that smart mouth? I need a new project to work on'

you should have said, either of these two texts when she said busy with work
Key point here is if you are going to ask a girl how her day is via text 95%+ of the time you want to lead it toward your soft close sequence.
My most common example of this is like this
me: So how's your wild Wednesday been thusfar?
her: good, almost done with work, you?
me: Going amazing, just got a killer workout in. Looking sharp for our romantic date
her: Oh ya, a date huh?
me: Mhm, just need to know if you like wine
her: I love white wine
me: okay perfect we should split a bottle of white sometime soon
her: sounds fun, I'd like that
me: So what's your schedule like this week?
her: I am free Thursday and Friday night
me: Friday night works. well split a bottle of white wine I've been meaning try with some chocolate covered strawberries
her: sounds amazing (or sometimes there is an objection about meeting at my place on the first date that would go right here in which case I pivot to a bar within walking distance to me).
me: awesome, shoot me your number for romantic date arrangement purposes
her: 111-111-1111
Anyways this is how a soft close and close should look in most cases.

send her the line "so give me some of the basics, any kids, tattoos, pets, favorite weekend activities, crazy exes or fun kinks" (you can leave the fun kinks part out if you think you are too platonic frame right now but I prefer to be more polarizing and sexual.
Then after you go through that process you ask her if she likes wine.
