Do either of these fit for “I don’t really do the whole please thing”? “You don’t think you’re good at pleasing?” “You think you’re bad at flirting?” Gonna do the do you like wine close after depending on her response. Any help is greatly appreciated!

Tbh, I think you were punishing her compliance by being a bit of a jerk unnecessarily and got the deserved non-compliance. If you really wanted to control frame by not making up cute names on command, you could have gone with "Daddy doesn't like to be rushed, honey(or some other pet name)" instead of "say please".
At this point, I'd still go with something like "Daddy doesn't like to be rushed, honey(or some other pet name)"

She's still replying, so you might as well see where things go. The whole 'daddy' plotline was likely not congruent either with your profile or her personality.
The two main elements of her message you could commit to are the confusion or the vibe, or maybe just be genuine and say that you understand where she's coming from
