I think that's fine. You could maybe make a joke or something and say "Are you related to vikings by chance?" or "It seems like you'd have some distant viking cousins.." These aren't end all be all, but could get her to laugh a bit if she usually has people assuming she's Nordic.

I could be wrong too. I’m taking a wild guess based off her name and looks. Those are some good suggestions. I can still try to bring up the Viking thing later. “I’ve always had a little thing for Viking girls”

of course you could be wrong, but that's why you're curious/making the assumption about it. And yes, bringing it up later would be just as fine, it could become your little inside joke/what you call her on the date and whatnot. It's sort of a hook phrase in that scenario like "Ahhh there's my little viking girl" you get the gist.
