Met a girl in the pub and got her number whilst petting her dog.. now she’s saying she’s just broke up with her ex.. what’s a good response and how to handle this? I don’t mind the waiting I’m in no rush. Should I just wave a few months? Or how can I switch the chat to something like this and make it casual conversation?

Agree. Do not take the "month or two" literally. Lead her and believe that you know her desires better than she knows them herself. This is never a reason to plow through legit resistance, but at the same time it's an opportunity to really cut through her bullshit, she will thank you for it ultimately.

Edit: looking more closely, I do not like your 17:29 text at all. It sounds like you don't care about her daughter. That was a mistake, and as I always say, when you f up it's time to take accountability, backtrack, and build comfort.

Yeah. It worked. Now keep leading. If she continues to balk at getting a drink, try inviting her to a cool event where you'll be. That's assuming you're really into her.
