I think she made this bullshit up to “not hurt my feelings” lol but girls say a lot of BS to hide their truth, so not sure if she was that interested from the beginning maybe a timewaster like most of the girls on the apps. Lots of texting back and forth and 1 hour long phone call but no meet up. I mean lol seriously “take a break from dating” haha sure.
Is there a clever text to send in response or is this set in stone?

The 1 hr long phone call was completely unnecessary. You may have come across too nice, needy on this phone call. But either way this is done. I'd recommend not to do phone calls before meeting up

She either met another dude and is being polite, or she's really taking a break.
Either way I would say something like this
"No worries, I'm looking for something a bit casual myself. Take care." and go on to the next. No point in trying to figure out why unless you really like her
